Oh the mouthwatering decadence of salty & sweet on your palette. (Especially for us vatas) These truffles are a nourishing, verrrry delicious way to satisfy a sweet fix, whether it's at the end of a meal or as an afternoon snack. No sugar required.
You can bet your sweet ass I've got three in my purse right now - Armed and ready for this Friday like a sweet and salty champ.
RECIPE
Makes 8-10 truffles
Ingredients

1/2 cup almonds
1/2 cup cashews
2 tbsp water
1 tsp maple syrup
1/2 tsp vanilla extract
1/4 tsp salt
1/4 tsp cinnamon
1/3 cup shredded coconut

Combine all ingredients (except the coconut) in a blender. Blend. You'll probably have to keep stopping and scraping ingredients down to the blade level as the ingredients combine since it will be mucho sticky and will build up along the blender walls.

Once the ingredients are well blended and become slightly pasty, (add a splash or 2 more of water to help this along) remove the delicious stickiness and place in a bowl. Roll 1 inch bites in your hand and roll them around in shredded coconut to coat. Store in fridge for up to 3-4 days.
