This chutney is a quick and simple way to add a cooling, flavorful punch to a variety of summer dishes. Add it to rice, cooked vegetables, curries, or atop your favorite piece of fish.

INGREDIENTS
1 cup cilantro, tightly packed / roughly chopped and rinsed
1/3 cup mint, tightly packed / roughly chopped and rinsed
3 tbsp unsweetened shredded coconut
1 tbsp olive oil
3 tbsp water
Juice of 1 lime
1/2 tsp salt
1 tsp ginger, chopped
DIRECTIONS
Combine all ingredients in a nutribullet or blender. Blend until smooth. Serve immediately. Can be stored in an air-tight jar for up to 3 days.
